Moroccan Beet Salad

This is one of my favorite recipes for beets. I used golden yellow beets for a change, but you can use regular red beets. I have been making this recipe for several years and it is always a winner.

Moroccan Beet Salad 

One Bunch Beets, roasted and diced
2 tsp. Olive Oil
1 tsp. Cumin
Juice of one Lemon
2 springs of fresh Mint
Maldon Sea Salt

Combine all ingredients and serve.
